This week Chef Andrew Mace put together healthy snacks for the Jacobsen Crew. With summer fast approaching, even though it may not seem like it here in Portland, hikes, camping, road trips, and hanging out in the sun are not too far away. Below you will find easy to replicate, fun recipes that will keep you healthy, active, and full this summer.

RECIPES:
Market Greens Smoothie with Bee Local Honey and Bee Pollen
Ingredients:
1 bunch spinach

1 bunch parsley

1 bunch watercress

10 oz almond milk

4 oz raw cashews

4 oz ice cubes

2 limes zest and juice
1 oz Bee Local Bee Pollen

3 oz Bee Local Honey- whichever you prefer 
Process:
In a large mixing bowl combine the spinach, watercress, and parsley and cover with cold water. Agitate the greens to be sure all dirt is gently rinsed away. Remove the greens from the bowl and allow all excess water to drain.
Next, warm the honey up so that it incorporates into the smoothie evenly. Either in the microwave or in a small sauce pot on the stove, bring honey to a simmer. Add all ingredients, except honey, to the blender. Blend on high for 30 to 60 seconds. While the mix is blending, add the honey and allow to mix for an additional 15 seconds. Serve immediately, or store in the fridge for up to 48 hours. 
Honey Nut Energy Bar
Ingredients:
6 oz unsweetened desiccated coconut flake
4 oz toasted sesame seed

5 oz toasted unsalted sunflower seeds

5 oz ground flax seed

9 oz powdered date pieces

1 T Jacobsen Kosher Salt

3 oz maple syrup

6 oz Bee Local Honey- whichever you prefer 

10 oz almond butter or chunky peanut butter

4 oz chia seeds
Process:
In a large mixing bowl, combine all ingredients except honey. In the microwave or a
small sauce pot warm to a very soft simmer. Add the honey to the bowl. If you have access to a stand mixer you can attach the paddle or dough hook and mix well on lowest speed, about 5 minutes. If not, slowly mix by hand for about 5 minutes.
Transfer the mix into a shallow baking dish or casserole dish and top with bee pollen. Allow to cool. Cut into small rectangles about 1 inch by 2 inches, or whatever shape you prefer.
