This quick jam comes together in 30 minutes or less and is an exciting addition to your breakfast rotation. Feel free to substitute with a different berry or mix multiple berries and stone fruit depending on the season. Spread quick jam over Big Spoon Peanut Butter Banana Bread, add as a topping to oatmeal or stir into your favorite yogurt for a healthy and tasty breakfast.
Makes about 1 cup of jam
INGREDIENTS
- 1 ½ – 2 cups chopped strawberries
- 2-3 tablespoons Jacobsen Co. Raw Blackberry Honey, to taste
- Juice from ½ a lemon
- 2 tablespoons chia seeds
PROCESS
Place strawberries and lemon juice in a small saucepan over medium heat. Let cook for 5-10 minutes until the strawberries begin to break down and release their juices. Smash strawberries with the back of a spoon or potato masher to break up any large chunks.
Remove from heat and stir in Raw Blackberry Honey and chia seeds. Let the jam set for at least 10 minutes at room temperature to thicken before serving. At this point, if you would like your jam to be even thicker, add an additional tablespoon of chia seeds and let set for another 10 minutes.
The quick jam will keep in an airtight container for up to 7 days in the refrigerator.
