Makes about 1 1/2 cups dressing
¼ cup roughly chopped fresh chives
1 tablespoon chopped fresh tarragon leaves
2 tablespoons chopped fresh parsley
Pinch cayenne pepper
1 teaspoon Pure Kosher Sea Salt
2 tablespoons Bee Local Oregon High Desert Honey
¼ cup champagne vinegar
1 egg yolk
1 ¼ cup safflower oil
Add the chives, tarragon, parsley, cayenne pepper, salt, honey, vinegar and avocado to a blender or food processor and blend until the herbs have broken down further and the mixture is smooth. Blend in the egg yolk.
With the blender running on high, add the oil in a slow and steady drizzle until completely emulsified. Store in the refrigerator for up to 5 days.
