The best mistake I've made this summer so far has been confusing the Jacobsen Co. Calabrian Chili Garlic Seasoning for a jar of chili powder while giving my yogurt dip a mini-makeover. Ever since then, I’ve been raining their latest seasoning on every dish deriving from the Mediterranean/Middle East; and now the new blend, initially misjudged as niche, appears atop my cucumbers, avocado wraps, grilled halloumi sandwiches and these grilled lamb kabobs.

Serves 4 as meal or 6 - 8 as appetizers
For the kabobs:
- 1 whole yellow onion, quartered
- 2 tablespoon olive oil
- 1lb ground lamb
- ½ cup fresh parsley, finely chopped
- 1 tbsp Jacobsen Co. Calabrian Chili Garlic Seasoning, plus more for garnishing
- ½ cup pepperoncinis, chopped
- A handful of wooden skewers
- Pickled red onions, to garnish
- Green onion blossoms, to garnish
- Fresh mint, torn, to garnish
For the sauce:
- 1 cup whole fat yogurt
- Juice and zest of 1 lemon, to garnish
- 1 tsp Jacobsen Salt Co. Kosher Sea Salt
- 3 garlic cloves, grated
Preheat the oven to 400°F, ready your grill and soak skewers in water while you prepare your lamb kabobs, (this will stop them from burning or worse- catching fire- while cooking). In an oven safe glass dish, toss onion in olive oil and roast for twenty minutes then set aside to cool.
As your onion rests, mix yogurt with lemon juice, grated garlic and Jacobsen Salt Co. Kosher Sea Salt in a medium bowl. Once the onion has cooled, pulse roasted onion in a food processor until completely broken down. In a large bowl, mix onion puree with lamb, parsley, pepperoncinis and Jacobsen Co. Calabrian Chili Garlic Seasoning.
Form lamb mixture into two-inch(ish) oblong ovals in your palm and gently slide them onto skewers. Repeat until all of the lamb is waiting to be grilled on sticks. Carefully place kabobs onto a hot grill over direct heat and cook each kabob for about four minutes per side, or until their hue has darkened.
Serve over rice, couscous, freekeh or any other grain. Garnish with red onions, onion blossoms, mint and rain Jacobsen Co. Calabrian Chili Garlic Seasoning over your dish. Also, make sure a dish of yogurt sauce is within dipping-range for the whole table.
