Roasted Butternut Squash with Hair Bender Coffee Salt

Fall cooking would be incomplete without this staple. Enjoy this simple, buttery recipe that highlights one of our seasonal favorites. 

Makes 8 servings

INGREDIENTS

2 medium squash, quartered lengthwise, seeds removed

4 tablespoons unsalted butter, melted

Jacobsen x Stumptown Hair Bender Coffee Salt

2 tablespoons brown sugar, optional


PROCESS

Preheat oven to 400 F. 

Arrange squash flesh side up on a baking sheet and brush with melted butter. Roast for 40-45 minutes, until squash is fork tender.  Sprinkle with coffee salt and brown sugar (if using) to taste. Serve immediately.
