Pinto Bean Burritos with Chili Lime Salt

Beans, cheese, tortillas, and salt. Sometimes, it doesn't take much to create a soul-warming meal. These addictive burritos were developed for our 2nd annual 5K-ish run, in partnership with Bon Appetit's Healthyish and Feast Portland. We wanted to provide a healthy, satisfying, and delicious recovery meal with a Jacobsen twist: adding Infused Chili Lime Salt.

Makes 4 burritos

1 teaspoon olive oil
½ cup finely diced white onions
3 cloves of garlic minced
1 teaspoon ground cumin
1 can pinto beans
½ teaspoon Infused Chili Lime Salt

¼ cup sour cream
1-2 tablespoons of canned Chipotle Peppers in Adobo Sauce minced
2 tablespoons chopped cilantro
2 cloves of fresh garlic
Fresh lime juice to taste

4 flour tortillas
1 cup Mexican Blend Cheese (shredded Mozzarella, Cheddar and Monterey Jack)
Additional Infused Chili Lime Salt for finishing

Heat the oil in a saucepan; add the chopped onions and sauté for approximately 5 minutes. Add the mined garlic and cumin and continue to sauté for a further 3 minutes.

Add the pinto beans along with the juices from the can. Add an additional ½ cup of water along with the salt. Bring to a boil and then lower the heat and gently simmer for 25 minutes or until the liquid has evaporated and the beans have begun to break down.

Meanwhile prepare the sauce. Heat a glug of oil in a frying pan. While the oil heats up peel the two cloves of garlic and smash with the flat side of a chopping knife. Toss the garlic in the oil on a medium-high heat for approximately 5 minutes or until they are golden brown on both sides and the garlic fragrance begins to release. While the garlic is browning begin to coarsely chop the cilantro and mince the peppers in adobo sauce.

Remove the garlic cloves and mince into a fine paste using a pestle and mortar. In a mixing bowl, combine the sour cream, chopped cilantro, garlic, and chipotle pepper paste, adding a bit more adobo sauce from the can. To finish add a squeeze of lime to taste.

To build the burrito dab and spread some sauce in the center of the tortilla, followed by a large spoonful of the beans and a healthy sprinkling of cheese. Fold two opposing sides in, then tightly roll the unfolded sides.

Serve the burritos with a sprinkling of Chili Lime Salt to add an extra zing and layer of flavor.
