The lavender fermented in this particular vinegar is from Lavender by the Bay, a family-owned farm located on the North Fork of New York’s Long Island. Co-owner Serge, originally from the South of France, has been farming his whole life and originally started this farm with his wife, Susan, as a hobby. They soon realized that the lavender really flourished near the salty sea air, and this year their business turns 20!
