Process
To make the shrub, peel the lemons and place the citrus peels in a large jar.
Add the sugar and salt and use a muddler to muddle the mixture together. Let sit for 6-24 hours.
Juice the lemons and add juice to muddled mixture. Stir and strain.
In a large glass, add the citron shrub to taste, top with sparkling water and enjoy!
