Process

Preheat a stainless steel or nonstick skillet with cooking oil over medium high heat.

Prepare the scallops: Remove the side muscle and pat dry scallops with a paper towel. Season with kosher salt.

Place scallops into the hot pan and let cook until a golden crust has formed, about 5-7 minutes. Check the underside intermittently while searing.

While the scallops sear, mix the butter and miso together in a bowl, then put aside.

Once the underside of the scallops have developed a golden brown crust, flip to cook and add the miso butter mixture to the pan and baste. Cook the scallops for another 2-3 minutes.

Once the scallops have developed a golden brown color on the second side, remove from the pan and set aside on a paper towel.

Plate the scallops, then finish with Vanilla Bean Salt, and enjoy.
